Hiyu is our dream to express the unfolding of life at our farm through food and wine. Our lived patterns upon the landscape, through the seasons, with plants and animals, are a creative act.
During our daily routines beauty and meaning arise spontaneously from interactions with the land. Food and Wine each offer a different way to access the insights into place that emerge in the garden, orchard, vineyard and field. During meals at the farm the meaning accrued in our fields is gathered at the table where it can be experienced as a meal.
Tables for Lunch, Dinner and Tastings are now available through the end of September. There are only four tables in the tavern and four seats at the Chef’s counter. Reservations are required for all experiences and we recommend booking at least ten days in advance. Thursday through Sunday with seatings from 12:00pm to 2:00pm for $150 per person: This five-course lunch celebrates the bounty of the garden and includes a seasonally attuned tasting of our wines paired with the food.
Every Saturday night at 6pm we offer a seven course meal paired with our wines. There is an extra element of magic in the dinners that is hard to quantify. The lunches are the best introduction to the food we serve on the farm, but the dinners take it to a more magical and transcendent level.
Every Sunday afternoon at 3pm our winemaker Nate Ready hosts an intimate tasting of our wines. The tastings are hosted at a small communal table for no more than twelve guests. This is the most educational format that we offer and the best way to learn about our approach to farming and winemaking. We will refund your tasting if you join The Understory or purchase a 12-bottle case of wine.
There is a half acre garden next to the tavern surrounded by vineyards and orchard. It is cared for by hand like a home garden. It is planted to both annual vegetables, perennial berries and small fruit trees. Equal attention is paid to plants for food as for biodiversity, fertility and medicine. We only use open pollinated seeds, usually heirloom cultivars with a specific culinary use. It is also common for us to use parts of the plant not usually intended for food.
The garden is not organized as a grid, but in more organic shapes connected by winding paths of wood mulch. It is more wild than an ordinary garden. All of our efforts are intended to produce intensity and diversity of flavor. This is quite different from the approach in a typical market garden where efficiency, yield and profitability affect many choices. Crops, herbs and flowers are planted very densely and several plants occupy different heights and positions in the same growing space. This occasions beautiful vignettes where the plants interact in surprising ways; often presaging the way they will appear on the plate. We make wide use of mulch to mimic nature and avoid tilling the ground. The only additions are compost made from garden and kitchen scraps plus manure from our animals. This way of wild growing creates intense flavors and allows us to cook with a restrained hand.
The rest of the thirty-acre property acts as a wild extension of the garden. Wherever possible we plant fruits, berries and herbs. We seed edible plants across the entire acreage encouraging plants like Kale, Daikon, Fennel and Cardoon to grow wild so that we can harvest them in months of the year when the garden isn’t producing as prolifically.
The garden provides a kaleidoscopic lens on the passage of the seasons. Its minute, micro-seasonal changes indicate where we are in the year, cue appetite, and let us see and taste the mood and evolving state of health of the land.

The Wine Tavern is currently open Thursday through Sunday. Lunches have seatings from Noon to 1:45pm; the tasting and farm walk is at 3:30pm; and Dinner or Supper experiences commence at 6:00pm. Reservations are required for all experiences.

Absolutely, we welcome all ages to Wine Tavern and offer a discounted rate on experiences for those too young to drink alcohol.
It is our deep belief that our wines are best enjoyed alongside food. However, we now offer a tour of the farm, salon and wine tasting that does not include food. It is possible to enjoy this experience after lunch or before dinner for a more immersive experience of the farm.
